You don't need iTunes, just plug the phone in got to the in phone camera files and copy and paste them to the desktop

When I would go into the DCIM folder its empty and it keeps popping up " no pictures or videos found".

you said you dont like iTunes, but do you have it cause I have the same phone and everything...take a screenshot of your phone then it should unlock the hidden files, and if not go to the options and display all hidden files

You can upload all at once but you can post them all in one post, just hit the add photo and insert a few times also you could of written the post from your phone.
